Shiga toxin-producing Escherichia coli (STEC) is a group of bacteria, primarily E. coli strains, that can cause foodborne illnesses. These bacteria produce toxins known as Shiga toxins, which can lead to symptoms ranging from mild diarrhoea to severe conditions like haemolytic uremic syndrome (HUS), which can cause kidney failure. Contaminated food, particularly undercooked ground beef, raw milk, and fresh produce, is a common source of infection. STEC infections can also be transmitted through person-to-person contact and waterborne routes.
